Ingredients You’ll Need

Fresh pizza dough (or pre-made crust)
1 tbsp olive oil
Vegan Corn’d Beef slices (I recommend Unreal Deli)
½ cup sauerkraut, well drained
¼ cup baby spinach and/or baby arugula
¼ cup dairy-free cheese shreds
2–4 tbsp vegan Thousand Island dressing (recipe below)
For the Vegan Thousand Island Dressing
½ cup vegan mayo
½ cup vegan sour cream
2 tbsp ketchup
2 tbsp diced pickles or relish
1 tsp lemon juice
1 tsp paprika
Pinch of salt
How to Make Dairy-Free Reuben Pizza
Step 1: Prep Your Dough
If using fresh pizza dough, remove it from the fridge and let it rise, covered with a kitchen towel, for about 1 hour. Drizzle with olive oil as it rests.
Step 2: Make the Dressing
In a small bowl, whisk together all the Thousand Island dressing ingredients until smooth. Set aside.
Step 3: Preheat & Stretch
Preheat your oven to 500°F (or as hot as your oven goes) for the best crust. Stretch the dough to your desired size—about 12–14 inches for a medium pizza.
Step 4: Assemble the Pizza
Spread a thin, even layer of Thousand Island dressing over the dough. Top with shredded or torn vegan Corn’d Beef, making little mounds so the edges crisp up in the oven. Scatter drained sauerkraut evenly over the pizza, then sprinkle with vegan cheese.
Step 5: Bake
Bake at 500°F for about 10 minutes, rotating the pan halfway through, until the crust is golden and toppings are heated through. If the crust needs more time, loosely cover with foil to prevent the toppings from burning and continue baking in 1–2 minute intervals.
Step 6: Finish & Serve
Remove from the oven, top with fresh baby greens, and let rest for a couple minutes to slightly wilt the greens. Slice into 6 pieces and serve hot!
