1 tbsp olive oil
Plant-based Corn’d Beef (I used Unreal Deli)
½ cup sauerkraut (very well drained)
¼ cup baby spinach and arugula mix (or any greens you like)
¼ cup dairy-free cheese shreds
2–4 tbsp Thousand Island dressing (see below)
For the Thousand Island Dressing
½ cup vegan mayo
½ cup vegan sour cream
2 tbsp ketchup
2 tbsp diced pickles or relish
1 tsp lemon juice
1 tsp paprika
Pinch of salt
How to Make It
Step 1: Prep the Dough
If you’re using fresh dough, remove it from the fridge and let it rise for about an hour. Use half the dough for a medium (12"–14") pizza. Drizzle with olive oil and let it rest, covered.
Step 2: Make the Dressing
Mix all the Thousand Island dressing ingredients together in a small bowl. Set aside.
Step 3: Preheat Oven
Crank your oven to 500°F (or as hot as it goes). A screaming-hot oven is key to a perfect crust!
Step 4: Assemble the Pizza
Stretch your dough and spread a generous layer of the Thousand Island dressing over it.
Top with shredded plant-based Corn’d Beef, drained sauerkraut, and vegan cheese.
